On May 22 at 3PM, The Bacon Takedown saunters into The Goodfoot in Portland, and humbly asks 20 local cooks to whip up their keenest, smartest baconest invention. Sign up now! As per always, the Takedown celebrates the skills of local foodies who have the inclination to show off!
The rest of y'all who don't want to cook and compete, mark your calendars and COME ON DOWN, because, wow, for a measly $10, enjoy a tasting of the finest bacon creations that ever were! You might see ice cream, muffins, tacos – I have no idea- but it will most definitely be a Portlandic spin on this meat candy. And vote on your favorite, because there are very serious prizes at stake here: amazingly serious cookware from Le Creuset, Anolon, Microplane, Wusthof, Oxo and Edgeware!
The Austin Bacon Takedown at SXSW was enlightening to our brains- because our brains did not think bacon could be reinvented and celebrated that many ways – and something tells me Portland might be more awesomer¬Â¦ we shall see¬Â¦

I’m stunned (though not surprised) by how awesome this sounds. Yeeeeah, Portland! I’ve had bacon-and-chocolate cupcakes, a bacon-brie-and-basil waffle and bacon ice cream, but I can’t wait to find out what other bacon delights can be concocted. :)

Part of the reason bacon goes with so much is because it’s distinct umami flavor can be added with all sorts of things.
bacon + saltiness (usually bacon is salted in the first place, i.e eggs and bacon variety)
bacon + sweetness (maple bacon treats)
bacon + sourness (bacon sour cream dip)
bacon + bitterness (bacon in a leafy salad)
Would definitely appreciate some tickets!

My always hungry teenage son went to hog heaven when I gave him a gift of Bacon Jerky. He wears Bacon t-shirts attesting to his love of this porcine ambrosia. At 6’5 and about 190 lbs with a metabolism that never abates, he’s one of those rare people who can eat a pig like a pig with no remorse for the calories, fat or nitrates that probably leave his system shortly after entry. He would love this event, and not suffer for it, and make all sorts of appreciative noises to the flopsweating chefs.

Best way to make bacon is to bake it on parchment paper in the over at 350degrees, sprinkled with brown sugar & cracked pepper. turn twice. It’s better than crack.

Where I come from, (Oklahoma), everything is cooked with bacon…it is an essential ingredient of southern food. I can’t imagine life without bacon in it.
