Organic is a word that’s thrown around a lot in this town, but not everyone knows exactly what it means. For Craig Nicholls, founder of the North American Organic Brewers Festival, it means a decade’s worth of work helping create an organic brewing an industry in Oregon and beyond.
Nicholls made his first organic beer in 2001 while working for Alameda Brewing. Back then, there were no organic hops and malts available in the US, Nicholls said, and he had to ship them in from Europe. Despite this hurdle, he found that many people were intrigued by the idea of an organic beer.
